Stuffed Mushieees
16 oz Baby Bella mushrooms-- Keep the mushroom stems for the stuffing
Oil for sautéing
Handful of cilantro
1/4 sweet onion (diced)
3 garlic cloves (diced)
4 oz cream cheese (Cut into small cubes)
1/2 cup shredded parmesan cheese
1/4 cup plain bread crumbs
Salt and Pepper to taste
Directions:
1- Preheat oven to 350° F. Line a baking sheet with foil.
2- After rinsing the mushrooms and allowing them to dry, pick off the stems and save them for the next steps.
3- Dice the mushroom stems and cook them in a heated pan with oil. Add the sweet onion and sauté until onions become translucent, then add the diced garlic.
4- Move the sauted veggies to a bowl, mix in both the cream cheese and parmesan cheese. Then add bread crumbs, egg, cilantro, and salt and pepper to taste.
5- Fill each mushroom cap with this mixture evenly.
6- Bake the stuffed mushrooms @ 350 for 20-30 minutes.
7- Optional- top the baked mushrooms with extra parmesan.
