Ultimate Cheesy Toast

Ingredients: 4-6 slices of bread 1 cup shredded  mozzarella 1/4 Cup Mayonnaise 1/4 Cup Grated Parmesan 1 Tbsp Thyme Celery salt and onion powder to taste Optional Veggie Toppings 2 Tbsp Butter 4 oz sliced mushrooms (About 6 mushrooms) 2 Tbsp diced onion Directions: 1- Toast the bread then line them on a baking sheet.  2- Turn the oven to broil once you have finished with the toast. 3- If adding the veggie toppings, melt butter in a pan and add the mushrooms and onion, cook for about 5 minutes, add thyme and sauté a few more minutes. 4- While the vegetables are sautéing, mix together the Mozzarella, Parmesan, and Mayo in a separate bowl. Add Onion powder, thyme (if you did not already add it to the msuhrooms) and salt to taste. 5- Use a spatula to spread the cheese mix onto the toast.  6- If you are adding veggies, place the mushroom mixture to the top of the cheese spread. 7- The topped toast slices should be placed on a baking sheet, and broil for about 5 minutes, o...

Fish Tacos

Ingredients: 1/3 Cup Mayonnaise 3 Tablespoons Sour Cream 1/4 Cup Cilantro (chopped) 1-2 cloves garlic (diced) Optional-- a handful of diced chives Directions: Mix together all of the ingredients. If you are making a slaw, clean and chop your cabbage, in a large bowl begin mixing in the sauce and the cabbage until you get the consistency you desire. It's absolutely amazing on shrimp tacos or with gardein fishless filets! Enjoy!!

Balsamic Reduction

  Ingredients: Balsamic Vinegar Directions: 1- Open your bottle of balsamic vinegar 2- Pour into a skillet or sauce pan, bring to a boil then reduce heat and allow it to simmer into a sweet thick reduction. It should be thick enough to coat the back of your spoon after about 10-20 minutes depending on how much vinegar you are reducing.

Green Enchilada Sauce

Ingredients:   1 small yellow onion 3 cloves garlic 1 Jalapeño  ( optional  for heat) 7 oz diced green chili (canned is fine) 3/4 cup vegetable broth Handful of Cilantro 1 tbsp cumin (Add more to taste) Salt and Pepper to taste Directions:   1- Dice the onion (And optional jalapeño  w/seeds removed) and sauté  in a heated/oiled skillet for about 5 minutes. 2- Add the diced garlic and sauté  for one additional minute. 3- After the onions are fully sautéed , add all of the ingredients to the food processor and blend to your desired consistency. Feel free to add additional spices to cater to your heat tolerance.  

Stuffed Mushieees

  Stuffed Mushieees Ingredients:   16 oz Baby Bella mushrooms-- Keep the mushroom stems for the stuffing Oil for  sautéing Handful of cilantro 1/4 sweet onion (diced) 3 garlic cloves (diced) 4 oz cream cheese (Cut into small cubes) 1/2 cup shredded parmesan cheese 1/4 cup plain bread crumbs Salt and Pepper to taste Directions:   1- Preheat oven to 350° F. Line a baking sheet with foil. 2- After rinsing the mushrooms and allowing them to dry, pick off the stems and save them for the next steps. 3- Dice the mushroom stems and cook them in a heated pan with oil. Add the sweet onion and sauté  until onions become translucent, then add the diced garlic. 4- Move the sauted veggies to a bowl, mix in both the cream cheese and parmesan cheese. Then add bread crumbs, egg, cilantro, and salt and pepper to taste. 5- Fill each mushroom cap with this mixture evenly. 6- Bake the stuffed mushrooms @ 350 for 20-30 minutes. 7- Optional- top the baked mushrooms with extra par...
